Strufoli Italian Honey Balls
INGREDIENTS
2 1/2 cups flour
4 eggs
1 egg yolk
1/4 cup vegetable shortening
1/2 tbsp. sugar
1/2 tsp. lemon rind
1 tsp. baking powder
Dash of salt
1 1/2 cups honey
Frying oil
Colored nonpareils “confetti candy”
DIRECTIONS
Make a well in flour, add eggs and egg yolk, vegetable shortening, sugar, salt and lemon rind.
Knead well until soft.
Roll into pencil-size strings and cut into 1/4" pieces.
Heat oil to 350 degrees; when a piece of dough is dropped into the oil it should come to the top.
Fry in small batches until golden-brown. Drain on brown paper.
Heat honey to soften.
Mix the fried balls with the softened honey.
Mound on serving dish and sprinkle with confetti candy.
