
Honey Sesame Lace Cookies
INGREDIENTS
3 tbsp. honey
1 cup confectioner's sugar
3 tbsp. unsalted butter
2 tbsp. water
1 cup sesame seeds
1/4 cup flour
1/4 tsp. pure vanilla extract
Pinch of salt
DIRECTIONS
In a small non-corrosive saucepan, bring honey, sugar, butter and water to a boil over medium heat while constantly stirring.
Allow to simmer for approximately 1 minute.
Remove from heat, stir in vanilla, sesame seeds, flour and salt until well combined.
Cool dough until just warm to touch.
Portion 1 tsp. of dough and roll into balls.
Place on a parchment-lined sheet pan about 4" apart. Or, spread evenly on a parchment-lined half pan and bake as one large cookie and break apart into rustic shapes.
Bake in a convection oven at 325 degrees for approximately 10 minutes, rotating pans halfway through, cooking until cookies are flat and golden-brown.
Transfer with parchment paper to cooling racks.
Once cooled, store in an airtight container for several days.
Use as a garnish for desserts or ice cream.
Drizzle cookies with chocolate once cooled.
Add a little spice with some cayenne, ginger or chipotle pepper, and serve with a savory dish or as a carrier for a unique hors d’oeuvre.
