
Honey Cake
INGREDIENTS
3 cups all-purpose flour
3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground ginger
1 cup honey
1 cup vegetable oil
1 cup coffee (warm)
1/4 cup orange juice
1 cup sugar
3 eggs
1 tsp. vanilla extract
2 tsp. orange zest
DIRECTIONS
Whisk together flour, baking powder, baking soda, salt and spices in a large bowl.
In a separate bowl, whisk together honey, oil, coffee, orange juice, eggs, vanilla and orange zest.
Make a well in the flour mixture and pour the liquids into the center of the flour mixture and thoroughly mix together with a whisk or electric mixer on low speed.
Generously grease a 10” Bundt pan or 2 medium loaf pans.
Pour batter into pan and place on a heavy sheet pan in a preheated 350-degree oven for approximately 45 to 60 minutes.
Cake is done if when touched it springs back or a cake tester inserted in center comes out clean.
Let cake rest for 15 minutes, then invert onto a wire rack and allow to cool completely. Cake can be topped with chopped walnuts, slivered almonds or drizzled with a chocolate icing.
Once baked, cake will stay fresh for several days in an airtight container or when well wrapped.
