
Honey and Orange Coffee Cake
INGREDIENTS
Cake
1/2 cup brown rice flour
1/2 cup garbanzo and fava bean flour
1 tbsp. baking powder
1/4 cup brown sugar
1/8 tsp. salt
1/4 tsp. ground ginger
1 tbsp. orange zest
1/4 cup honey
1 tsp. vanilla extract
1 egg
1/2 cup buttermilk
2 tbsp. butter
1/4 cup unsweetened applesauce
Honey for drizzling
Topping
3/4 cup gluten-free oats
2 tbsp. cold butter
2 tbsp. brown sugar
DIRECTIONS
In large bowl, whisk the flour, baking powder, brown sugar, salt, ginger and orange zest together.
In separate bowl, whisk together honey, vanilla extract, egg, buttermilk, melted butter and applesauce.
Combine with flour mixture, and stir until just combined.
For the topping, mix oats, cold butter and brown sugar to form little pebbles.
Coat an 8" x 8" pan with butter or cooking spray.
Pour cake batter into pan and top with crumb topping.
Drizzle with honey.
Bake at 400 degrees for 25 minutes or until toothpick inserted in center comes out clean.
