
Fluffy Coffee Frosting
INGREDIENTS
2 egg whites
1/4 tsp. salt
1 tbsp. cold coffee
1/2 cup honey
1/2 tsp. vanilla extract
DIRECTIONS
In top of double boiler, mix egg whites, salt and coffee.
Whip with beater until egg whites hold their shape.
Continue beating while pouring honey in a fine stream.
When all is added, cook over boiling water, beating constantly until mixture forms peaks when beater is raised. This takes about 5 minutes.
Remove from heat.
Add vanilla and beat until frosting is of spreading consistency.
