
Honey Peach Pie
INGREDIENTS
2 lbs. fresh peaches, peeled and sliced
2/3 cup honey
2 tbsp. lemon juice
1/4 cup tapioca
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 tbsp. butter
Two 9" pie crusts
DIRECTIONS
Line a 9”-deep dish pie plate with crust. Set aside.
Combine peaches, honey, lemon juice, tapioca, vanilla extract, cinnamon, nutmeg and salt in a bowl and toss lightly to coat all peaches.
Pour peaches into pie crust and dot top with butter.
Cover with remaining pie crust and seal edges. Cut a hole in middle of top crust or cut several slits around pie to vent.
Loosely cover edges of pie crust with foil.
Bake in a convection oven on low fan for 20 minutes. Remove foil and continue to bake for approximately an additional 20 minutes until crust is nicely browned.
